Indochine Le Marais French Roast

A true French Roast (not charbroiled!), Le Marais is substantial in body, bold and bittersweet, yet smooth. It's mix of mostly heirloom Da Lat Bourbon Arabica coffee with a small amount of Excelsa and Buon Me Thuot Peaberry, sure to please the French Roast connoisseur.

Possessed of the dynamic acidity beloved of French Roast connoisseurs, Le Marais also has a fullness of flavor often missing from American-style French Roasts. We have become accustomed in the USA to coffeehouse chainstore "French Roast" which brings coffee to the second "crack" during roasting, burning the sugars and oils and causing a breakdown of the coffee flavor elements. Many of the compounds produced by over-roasting are highly intolerable to digestion, resulting in heartburn and other unpleasant reactions.

German scientists (Germany is one of the world's top exporters and importers of coffee!) have identified over 1000 compounds in coffee, one of the most complex foods on the planet. Perhaps 40-100 of these substances create the flavor we think of as coffee. Probably half of these elements are destroyed when coffee is burnt, causing a shallow flavor overwhelmed by a smokey or charcoal taste. Some coffee enthusiasts like this. Le Marais is a guardian of the original true French Roast standard, using an heirloom variety of Bourbon Arabica that is the predecessor of famous world coffees including the Jamaica Blue Mountain Region coffee. Take a trip back in time and enjoy this gem, roasted slowly to a uniform dark color. Say no to "crack"!

Serving Suggestions:
We prefer it hot and strong. The French Press extracts maximum flavor from this blend. Also fine in the Phin filter and drip machines. Use 1.5 - 2 tblsp per cup. French Roast is not a great candidate for icing.
