Bar Drinks: Cocktails with Highlands Ready-To-Drink Coffee

Part of the reason that we love the Highlands Ready-to-Drink coffee is that it is so versatile for using as a base for all types of drinks and recipes, even desserts. There is something compelling about the convenience of having such a gourmet coffee, balanced with creamer and sugar or counterbalanced in the Black with other ingredients to create some wonderful and exotic tastes that are easy to duplicate every time. Part of the fun of creating food and drink is reproducibility... will it work every time? Yes, it will, with the Highlands Iced Coffee as a base.

In our sales initiative to restaurants, lounges and bars, who need a drink like the RTD to be able to offer a full menu of coffee-based drinks, alcoholic or non, we found that having a database of ready-to-make recipes was critical to making it easy for them to implement. So we put in many hours perfecting unique recipes for the RTD and creating cards and table signs to help restaurants and bars bring the RTD drinks to their customers, whether as a simple Iced Coffee or as a specialty drink or dessert.

African Spice Print View

A personal favorite inspired by a drink we enjoyed at the Charter Club in Boston; we wondered if we could improve on the concept and make an iced version. Twenty tries later, we felt ready to unveil African Spice, Iced Version. Thank you, Charter Club! The theme of the Charter Club is 1900's Gentlemen's Club, and the African Amarula Liqueur was a perfect cornerstone.

Ingredients:

  • 4 oz RTD Black
  • 1.5 oz Amarula Liqueur
  • 1/2 oz Amaretto
  • 1/2 oz Capt Morgan Spiced Rum

Equipment: Shaker and ice (crushed, preferably)

Directions:

Combine ingredients with 1/3 cup ice, shake until ice cold
and pour out with ice.

Black Forest Ice Print View

Ingredients:

  • 3 oz RTD Black
  • 1.5 oz Kirshwasser
  • 1 oz Chocolate Liqueur
  • 1/2 oz Vanilla Schnapps

Equipment: Blender and 1.5 cups ice

Directions:

Combine ingredients and blend until the consistency of a soft slush. Garnish with maraschino cherry and dark chocolate shavings. We enjoy Cask & Cream Chocolate Temptation liqueur, but Godiva or other chocolate liqueur would be a good substitute.

Ingredients:

  • 4 oz RTD milk
  • 1.5 oz Amaretto
  • 1 oz Myers Rum

Equipment: Shaker and ice

Directions:

Combine ingredients with 1/4 cup ice, shake until ice cold and pour out with ice.

Ingredients:

  • 4 oz RTD Milk
  • 1.5 oz Van Gogh Dutch Caramel Vodka
  • 1/2 oz Frangelico Liqueur

Equipment: Shaker and cracked ice

Directions:

Combine ingredients with ice, shake until ice cold and pour out with ice. If you can't find the new Van Gogh Caramel, use another caramel vodka or schnapps. Bailey's Caramel Cream also works but makes the drink possibly a little too rich on the milk (try it with RTD Black).

Happy Irishman Print View

Baileys, whether the original or flavored with Mocha or Caramel, is one of the best mixers for coffee. The Happy Irishman is a drink that gives you a case of Happy Mouth and creates a perfect balance of flavors. It has maybe the highest approval rating among our RTD "on-the-rocks" drinks.

Ingredients:

  • 4 oz RTD Black
  • 1 oz Bailey's Irish Cream
  • 3/4 oz Crème de Cacao
  • 1/2 oz Kahlua Mocha

Equipment: Shaker and ice

Directions:

Combine ingredients with 1/4 cup ice, shake until ice
cold and pour out with ice. Godiva Liquor or Cask and Cream Chocolate Temptation would work in place of the Crème de Cacao.

Heart of Darkness Print View

I love it when incongruities come together to create a mysterious single flavor that is difficult to identify. Fittingly named after one of my favorite novels, it is somehow very alluring to me and a pleasure to sip slowly while staring into the night on a hot summer evening and thinking of... nothing. Just feeling the breeze.

Ingredients:

  • 1.5 oz RTD Black
  • 3/4 oz Jose Cuervo Black Tequila
  • 1 oz Vodka
  • Dash of Cherry Brandy
  • Maraschino Cherry

Equipment: Shaker and ice

Directions:

Use 1 cup ice to chill the mixture quickly (coffee should
be cold to start). Add ingredients, shake furiously and pour
through strainer. Pour into chilled glass. Add Maraschino
cherry (the heart). Optional: Garnish with orange slice.

Mocha Slush Print View

Blended drinks can be a challenge to keep flavorful, but we had great success with G7 Instant Coffee. In the end, we found this drink impossible to put down. It's good to the last draw on the straw!

Ingredients:

  • 2 oz RTD Black
  • 1 sachet G7 3-in-1 Instant Coffee
  • 1.5 oz Kahlua Mocha
  • 1 oz Bailey's Caramel Irish Cream

Equipment: Smoothie blender and 1.5 cups ice

Directions:

Combine ingredients and blend at fast setting until fluffy (forms peaks). Add whipped topping (optional).
Suggested garnish: Reserve a small amount of G7 Pure
Black instant coffee powder and sprinkle on top; add
shaved dark chocolate pieces.

I thought I invented this drink until one of our customers, a mobile coach owner who is a big fan of the RTD coffee, told me he drinks this very same combination at home. I complimented him on his superb taste!

Ingredients:

  • 1.5 oz RTD Black
  • 1.5 oz Vodka
  • 1.5 oz Kahlua Mocha

Equipment: Shaker and ice

Directions:

Use a lot of ice so that the ingredients do not get diluted.
Coffee should be pre-chilled. Pour the ingredients over ice
in a shaker and shake vigorously till ice cold. Strain
immediately into a martini glass.
Garnish with an orange slice.

Ok, it's a silly name... but it's a compelling coffee drink with the warmth of Caramel Cream and my favorite rum, Myers Dark.

Ingredients:

  • 4 oz RTD Black
  • 1 oz Bailey's Caramel Irish Cream
  • 3/4 oz Kahlua Mocha
  • 1/2 oz Myer's Dark Rum

Equipment: Blender and 1/4 ice

Directions:

Combine ingredients with 1/4 cup ice, blend until ice is
very small but not as fine as a smoothie. Garnish with a dollop of
heavy cream and/or a dusting of black instant coffee powder and/or cocoa.

Ingredients:

  • 4 oz RTD Black
  • 1/2 oz Triple Sec
  • 1 oz Aftershock Cinnamon
  • 1 oz Vodka
  • 1 oz Simple Syrup
  • Pinch of Nutmeg

Equipment: Blender and 1.5 cups ice

Directions:

Combine ingredients and blend until the consistency of a stiff slush.
Garnish with a cinnamon stick. Serve with a spoon if very stiff;
otherwise, serve with a straw.

Amarula liqueur and Coconut Rum... my oh my. The mysterious, fruity Amarula liqueur is quite possibly the best cream Liqueur for coffee. It's a newly popular liqueur you should be able to find in your local store. It takes years to distill, the story is fascinating. Try a little Amarula in hot coffee, too, with a dollop of whipped cream for an easy, warm treat.

Ingredients:

  • 3 oz RTD Milk
  • 1 oz Amarula Liqueur
  • 1.5 oz Coconut Rum

Equipment: Shaker and ice

Directions:

Combine ingredients with 1/3 cup ice, shake until ice cold
